Greta’s first favorite baby foods were peas and green beans. The fad right now: if it’s a carb or cheesy, she’s thrilled. So I have resorted to hiding veggies in other foods.
Behold the green bean quesadilla in all its veggie-hiding glory!
Start with a wheat tortilla. Place on a preheated skillet.
Mash cooked green beans with a fork- the canned ones are the softest.
Spread the green beans on the tortilla and sprinkle with shredded cheddar cheese. Cook on medium-low for 2 minutes on each side.
Tonight, my carb lover, only wanted to eat food from MY plate – not hers, not her father’s, and not even the look-I-promise-it’s-from-your-plate trick worked.
