Spicy Sweet Potato & Lentil Dip

This sweet and spicy dip is sure to please the crowd at your next event.  It’s easy, tasty, filled with veggies, and did I mention easy?

Roast 5 small to medium sweet potatoes at 400 degrees for an hour.  The smaller sweet potatoes tend to be sweeter and roast very nicely. Allow sweet potatoes to cool, then peel off skin – this should be easy enough to do with your hands.

Combine sweet potatoes with 2 cups of cooked lentils, 2 tablespoons olive oil1 tablespoon curry powder, 1 tablespoon of ground coriander, and 1 tablespoon of chili powder.   Blend until smooth.  Add 1/2 – 1 cup water, if needed to blend more smoothly.

Serve with a sprinkling of red pepper flakes and tortilla or pita chips.  I am personally, a big fan of Earth Fare’s spicy blue tortilla chips.

This recipe works well with my Sunday British theme, with the appearance of curry.  We are off to a friend’s house for the Super Bowl, though I admit, the only reason I know who is playing in the Super Bowl is due to my PE teacher friends.  I am just not into football like some are – blasphemy, I know!  Whatever your plans are, have fun and stay safe.  Tomorrow is a work/school day.  🙂
